USA Food News : เมกะเทรนด์อุตสาหกรรมอาหารของสหรัฐฯ ในปี 2562
นายวิคเตอร์ มาร์ติโน นักเขียน/นักวิเคราะห์ของสื่อ www.just-food.com ได้วิเคราะห์และคาดการณ์ เมกะเทรนด์อุตสาหกรรมอาหารของสหรัฐฯ ในปี 2562 ซึ่งจะเป็นปัจจัยสาคัญต่อผู้ประกอบการอุตสาหกรรมอาหารสหรัฐฯ ในด้านการพัฒนาผลิตภัณฑ์และการวางกลยุทธ์การตลาด ซึ่งแนวโน้มในปี 2562 จะมีความแตกต่างจากปี 2561 ในเรื่องความโปร่งใส (Transparency) ความเรียบง่าย (Simplicity) สินค้ามีการเข้าถึงผู้บริโภค (Personalisation) ยกระดับสินค้าคุณภาพ (Premiumisation) มีความยั่งยืน (Sustainability) และออกแบบนวัตกรรมด้วยเทรนด์ฟิจิตัล (Phygital) และได้สรุปได้เป็น 6 แนวโน้มเป็น ดังนี้
1. Traceability and Blockchain : การตรวจสอบย้อนกลับแหล่งที่มาของสินค้าและการใช้โครงข่ายการทาธุรกรรมแบบดิจิตัลหรือบล็อกเชน (Blockchain) ที่ไม่ต้องใช้คนกลาง (ธนาคาร สถาบันการเงิน ฯลฯ) ผู้บริโภคมีแนวโน้มต้องการทราบแหล่งที่มาของสินค้ามากขึ้น เช่น ต้องการทราบแหล่งที่มาของมะเขือเทศที่ใช้ผลิตซ้อสของบริษัท Heinz Ketch ว่าปลูกในรัฐใด มาจากรัฐ California หรือ Florida หรือที่ใด และใครเป็นผู้ปลูก เกษตรกร หรือบริษัทการเกษตร เป็นต้น หรือต้องการทราบว่าวัตถุดิบของสินค้าผลิตภายในประเทศ หรือนาเข้าจากต่างประเทศ และมาจากประเทศใด เช่น จีน เม็กซิโก หรือ ยุโรป เป็นต้น นอกจากนี้การตรวจสอบย้อนกลับแหล่งที่มาของสินค้าถือเป็นกุญแจสาคัญของการทาธุรกิจด้วยความโปร่งใส
2. Omnichannel : การใช้กลยุทธ์การเข้าถึง/การเชื่อมโยงการสื่อสารกับลูกค้าหลากหลายช่องทางเข้าไว้ด้วยกันเพื่อให้ความสะดวกและความประทับใจกับลูกค้า ปี 2562 จะเป็นยุคอวสานของการจาหน่ายสินค้าผ่านช่องทางเดียวหรือ Single Chanel และนับแต่ปี 2562 เป็นต้นไป อุตสาหกรรมอาหารของสหรัฐฯ จะเป็นรูปแบบ Omni World มากขึ้น
3. Artificial Intelligence (AI) : AI จะเข้าไปมีส่วนต่อการพัฒนาผลิตภัณฑ์ในวงการอุตสาหกรรมอาหาร เช่น การใช้ AI แทนคนซึ่งจะมีความแม่นยากว่าในการวิเคราะห์รสชาติในการพัฒนาผลิตภัณฑ์อาหารตัวใหม่เมกะเทรนด์อุตสาหกรรมอาหารของสหรัฐฯ ปี 2562
4. The Millennial Mindset : ผู้ประกอบการจะพัฒนาสินค้าและเข้าถึงผู้บริโภคตามแนวคิดของกลุ่ม Millennial แต่จะครอบคลุมผู้บริโภคทุกวัยทุกกลุ่ม ตั้งแต่กลุ่ม Millennial, Gen Z และ Baby Boomers
5. The VC : นับตั้งแต่ปี 2561 นักลงทุน หรือ Venture Capitalist เข้ามามามีบทบาทต่อการพัฒนาอุตสาหกรรมอาหารของสหรัฐฯ ไม่ว่าจะเป็นบริษัทร่วมลงทุนจาก silicon valley tech ที่ร่วมลงทุนในธุรกิจอาหารด้วยเม็ดเงินหลายร้อยล้านดอลล่าร์ ทั้งทางด้าน financing start-up หรือการซื้อควบกิจการในปี 2561หรือการให้คาแนะนา ออกความคิดเห็นต่อความจาเป็นในการเปลี่ยนแปลงธุรกิจ หรือมุ่งการใช้เทคโนโลยี่ในการพัฒนาผลิตภัณฑ์ ซึ่งนายมาร์ติโนมองเห็นว่า ในปี 2562 กลุ่ม VC จะส่งผลกระทบในทางบวกต่อการพัฒนานวัตกรรม start-up ในวงการอุตสาหกรรมอาหาร
6. The "Trump" Card : ในปี 2562 แนวโน้มจะเป็นสงครามการค้าด้วยวิธีการเรียกเก็บภาษีศุลกากรสินค้าซึ่งมีผลกระทบต่อสินค้าอาหารและสินค้าเกษตรจากจีน เม็กซิโก อียู และตุรกี ทางผู้ส่งออกสหรัฐฯ ที่โดนผลกระทบได้แก่ สินค้า soybean, almond, lobster fisheries ซึ่งจีนเคยเป็นผู้นาเข้าหนึ่งในสองรายใหญ่ที่นาเข้าสินค้าดังกล่าวจากสหรัฐฯ แต่ได้ระงับการนาเข้าเนื่องจากภาษีสูง จีนจึงหันไปนาเข้าจากบราซิล และอาร์เยนติน่า ซึ่งจะเป็นผลให้เกษตรกรอเมริกัน หันไปปลูกข้าวโพดเป็นการทดแทน

ประกาศกระทรวงสาธารณสุข ฉบับที่ 98 (พ.ศ.2529) เรื่อง มาตรฐานอาหารที่มีสารปนเปื้อน
อาหารที่มีสารปนเปื้อนต้องมีมาตรฐาน โดยตรวจพบสารปนเปื้อนได้ไม่เกินข้อกำหนด
ดังต่อไปนี้
(1) โลหะ
(ก) ดีบุก 250 มิลลิกรัม ต่ออาหาร 1 กิโลกรัม
(ข) สังกะสี 100 มิลลิกรัม ต่ออาหาร 1 กิโลกรัม
(ค) ทองแดง 20 มิลลิกรัม ต่ออาหาร 1 กิโลกรัม
(ง) ตะกั่ว 1 มิลลิกรัม ต่ออาหาร 1 กิโลกรัม เว้นแต่อาหารที่มีสารตะกั่ว
ปนเปื้อนตามธรรมชาติในปริมาณสูง ให้มีได้ตามที่ได้รับความเห็นชอบจากสำนักงานคณะกรรมการอาหารและยา
(จ) สารหนูในรูปอนินทรีย์ (Inorganic Arsenic) 2 มิลลิกรัม ต่ออาหาร 1 กิโลกรัม สำหรับ

ไม่เกิน 0.02 มิลลิกรัม ต่ออาหาร 1 กิโลกรัม สำหรับอาหารอื่น
(2) อฟลาทอกซิน 20 ไมโครกรัม ต่ออาหาร 1 กิโลกรัม
(3) สารปนเปื้อนอื่น ตามที่ได้รับความเห็นชอบจากสำนักงานคณะกรรมการอาหารและยา
และในวันที่ 30 สิงหาคม 2561 มีประกาศเพิ่มเติมส่วนขยายของข้อ (3)นี้ดังรูป
